Carlingford Oysters

World renowned, family run Carlingford Oyster Company has the privilege of working in the heart of Carlingford Lough where oysters have thrived for many centuries. We are more than pleased to have Carlingford as an Official Oyster Supplier of London Oyster Week.

'Carlingford Oyster Company are delighted to be involved with London oyster Week. We have been farming our oysters for over 40 years and have witnessed the shift in oyster consumption from the domain of the elite to a pleasure that is enjoyed by so many that are curious for new taste experiences. Oysters are being introduced to a new audience because of events such as this and through the work done by ambassadors of our industry like Katy, The Oyster Lady.’

The Oysters

It takes us over three years to grow a Carlingford Oyster to market size so that’s a lot of filtering. Next time you try one of our Carlingford Oysters look out for the sweet slightly nutty flavour followed by a slight tannic and lingering after taste.

The Farmer

Kian has taken over the running of the farm from his father, Peter who started it in 1974. Peter's daughter Charm also works in the family business. They work as a brilliant team and are a shining example of how an oyster farm can operate.

The 'Merroir'

In Carlingford Lough we have a huge exchange of water with each tide which provides the nutrients on which the oysters feed. In conjunction with this freshwater flowing in from the mountain sides north and south of the Lough give our Carlingford Oysters a very rich and distinctive flavour.
