Dooncastle oysters was founded in 2006, it is located in Connemara Co.Galway, all of the oysters are finished off in grade A waters in Galway Bay. Dooncastle Oysters are a perfect balance of rich iron & mineral flavours with a sweet body and fantastic meat to shell ratio.
They are great as a cocktail oyster raw on the half shell. The larger sizes lend themselves well to oyster recipes.
I began as an assistant to oyster farmers, learning how to maintain and care for stock. In each farm I worked in I was taught something new and from this I developed my own technique. I decided rather than mass producing I would bring quality to the market, through this my oysters acquired their unique flavour. Once you've tasted Dooncastle oysters, I think you will agree.
